Food processing and preservation technologies in Armenia

The food that is subject to recycling and preservation, first and foremost, must be healthy, undamaged and meet the standards of technological maturity.

Vegetables and fruits intended for preservation must have appropriate firmness, colour and taste. For fruit juices and evaporated conservation, it is also permitted to use fruits with certain flaws and different levels of maturity.

The level of maturity is estimated on the one hand by subjective (based on the organic qualities of fruits or vegetables) and, on the other hand, by objective -laboratory tests.
